Avocado Toast with Cajun Chickpeas

Ingredients
  

  • 8 oz chickpeas drained
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp oregano
  • 1/4 Tbsp Cajun seasoning
  • 1/4 Tbsp smoked paprika
  • 1 Tbsp olive oil
  • 2 slices sourdough bread
  • 1 ripe avocado mashed
  • 1 beefsteak tomato sliced
  • 1 tsp red pepper flakes
  • 1 tsp lime juice
  • Salt and pepper to taste

Method
 

  1. Preheat air fryer to 380°F. Add chickpeas, olive oil, and all spices to a bowl. Toss well to coat evenly.
  2. Add chickpeas to air fryer tray and cook for 15–20 minutes or until crispy, shaking halfway through.
  3. Toast bread slices until golden and crisp.
  4. In a bowl, mash the avocado with lime juice, salt, and pepper. Spread the avocado mixture evenly over the toasted bread.
  5. Top with desired amount of tomato slices and Cajun chickpeas. Enjoy!
